Yes. Guests can still book through your page; their bookings arrive as pending rather than confirmed, and you arrange payment with the guest directly. Once they've paid, record the payment on the booking and confirm it.
Connecting Stripe removes that manual step and gets you paid at the moment of booking, so most sites set it up early.
